It’s Alive With Brad

Old Timer

Ingredients

  • 1 1/4 lb. eye of round beef
  • 3 Tbsp. pure maple syrup
  • 1/4 cup Worcestershire sauce
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. kosher salt
  • 1 Tbsp. drained capers
  • 1 Tbsp. caper liquid
  • 1 tsp. chili powder
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. dried oregano
  • 1 1/2 tsp. Tellicherry pepper

Bringin’ the Funk

Ingredients

  • 1 1/4 lb. beef
  • 10 dashes fish sauce
  • 2 Tbsp. honey
  • 3 Tbsp. soy sauce
  • 3 garlic cloves
  • 1 Fresno chile
  • 1 1″ piece ginger
  • 1/4 cup gochujang
  • 1/4 tsp. Chinese five–spice powder
  • Sesame seeds (for topping)

Directions

  1. Lay out on racks - no overlapping and cook until dried out.

First batch I did in the oven at 140 for 2 hours or so - turned out pretty good.

Second batch on the smoker - 140 > 170 for about 3.5 hours.
