Stuffing

Made Christmas 2023 - best yet. Dried out the bread 2 days before, mixed in the morning and set aside until turkey was pulled off to rest. Baked at the same time as the Vegetable Medley.

Thanksgiving 2024 - 45 minutes - no more than that. Baked it after I pulled the turkey off

Ingredients

  • 2 loaves of crusty bread, cut into 1/2 inch cubes
  • 1 lb of sausage, casings removed
  • 1/2 lb of bacon, cut into chunks
  • 1 onion chopped, not too fine
  • 3 ribs of celery
  • 3 cloves of garlic, pressed
  • 1 bunch of sage, minced
  • handful of thyme, minced
  • 1/2 lb of butter
  • 2 cups of stock

Directions

  1. Dry bread out in a 250 degree oven for 40 minutes, let cool and set aside until ready to make stuffing.
  2. Brown sausage in a large skillet, breaking up into small pieces. Remove from pan and set aside.
  3. Add bacon to pan and cook until crispy. Remove from pan and set aside.
  4. Drain all but 2 Tbsp of fat from the pan.
  5. Add onion and celery and cook until the onions are translucent.
  6. Add garlic and cook for 1 minute.
  7. Add sage, and thyme and toss to combine. Remove from the pan and add sausage and bacon. Mix well.
  8. Pour mixture over the bread and mix well. Add 2 cups of stock and stir to combine, let sit for 5 minutes.
  9. Melt butter, and add it and reserved bacon fat to the bread mixture and stir well.
  10. Press into an ungreased baking dish, and bake at 400 degrees uncovered for 30 minutes.
