Stuffing
Made Christmas 2023 - best yet. Dried out the bread 2 days before, mixed in the morning and set aside until turkey was pulled off to rest. Baked at the same time as the Vegetable Medley.
Thanksgiving 2024 - 45 minutes - no more than that. Baked it after I pulled the turkey off
Ingredients
- 2 loaves of crusty bread, cut into 1/2 inch cubes
- 1 lb of sausage, casings removed
- 1/2 lb of bacon, cut into chunks
- 1 onion chopped, not too fine
- 3 ribs of celery
- 3 cloves of garlic, pressed
- 1 bunch of sage, minced
- handful of thyme, minced
- 1/2 lb of butter
- 2 cups of stock
Directions
- Dry bread out in a 250 degree oven for 40 minutes, let cool and set aside until ready to make stuffing.
- Brown sausage in a large skillet, breaking up into small pieces. Remove from pan and set aside.
- Add bacon to pan and cook until crispy. Remove from pan and set aside.
- Drain all but 2 Tbsp of fat from the pan.
- Add onion and celery and cook until the onions are translucent.
- Add garlic and cook for 1 minute.
- Add sage, and thyme and toss to combine. Remove from the pan and add sausage and bacon. Mix well.
- Pour mixture over the bread and mix well. Add 2 cups of stock and stir to combine, let sit for 5 minutes.
- Melt butter, and add it and reserved bacon fat to the bread mixture and stir well.
- Press into an ungreased baking dish, and bake at 400 degrees uncovered for 30 minutes.
