Taco Seasoning

[Alton Brown - Good Eats - American Classics VIII: Tacos]

Last time I tried this it was pretty salty.
I used some Better Than Bouillion for beef broth which may be the culprit.
Next time try leaving salt out until the end.

Seasoning

  • 2 Tbs Chili Powder
  • 1 Tbs Ground Cumin
  • 2 Tsp Corn Starch
  • 2 Tsp Salt (maybe leave out and salt at end to taste)
  • 1 1/2 Tsp Hot Smoked Paprika
  • 1 Tsp Ground Coriander
  • 1/2 Tsp Cayenne

Taco Meat Recipe

  • 1 onion chopped
  • 2 cloves of garlic, minced
  • 1 pound of ground sirloin
  • Taco Seasoning as above
  • 2/3 cup beef broth

Directions

  1. Cook onion on medium until browned around the edges.
  2. Add garlic, salt and beef and cook for 3 - 4 minutes until browned.
  3. Add all taco seasoning, stir and beef broth.
  4. Simmer until thick

Another Mix (without corn starch)

  • 3 Tbs chili powder

  • 1 1/2 Tbs ground cumin

  • 3 teaspoons garlic powder

  • 3 teaspoons paprika

  • 1 1/2 teaspoons dried oregano

  • 1 1/2 teaspoons salt

  • 1 1/1 teaspoons onion powder

  • 3/4 teaspoon black pepper

  • Use 3 Tbs per 1 pound of meat
