Salsa Verde

[America’s Test Kitchen]

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 Tbs lemon juice
  • 1 cup parsley
  • 2 anchovy fillets (or 1 tsp of anchovy paste)
  • 2 Tbs capers
  • 1 head roasted garlic
  • 1/4 tsp red pepper flakes
  • Salt

Directions

  1. Roast garlic and let cool.
  2. Add garlic, lemon juice, parsley, anchovy and capers to bowl of food processor and pulse to combine.
  3. Add olive oil and red pepper flakes and pulse a few more times.
