Four Small Loaves

Youtube Needed to add more water to get the dough to come together - have adjusted weights. Got a better crust by not turning the oven down for the last 10 minutes.

Ingredients

  • 1 c (236 grams) water
  • 1/2 tsp yeast
  • 2 1/2 c (312 grams) flour
  • 1 tsp salt

Directions

  1. Mix water and yeast and stir to combine.
  2. Add flour and salt and mix until a shaggy dough forms.
  3. Cover and let rest for 30 minutes.
  4. Two sets of slap and folds, 30 minutes apart. Cover and let sit in refrigerator overnight.
  5. Pull from refrigerator the next day, set of folds and shape into a ball. Let rest covered at room temperature for 30 minutes.
  6. On a floured surface, fold dough in half and cut into four pieces. Flatten and roll into balls. Let rest for 10 minutes.
  7. Flatten, fold, press and pinch into a loaf shape. Place on parchment and cover with towel, let rise for 30 minutes.
  8. Dust with flour, score and bake covered at 450 for 20 minutes, then uncovered at 390 for 10 minutes.
