Four Small Loaves
Youtube Needed to add more water to get the dough to come together - have adjusted weights. Got a better crust by not turning the oven down for the last 10 minutes.
Ingredients
- 1 c (236 grams) water
- 1/2 tsp yeast
- 2 1/2 c (312 grams) flour
- 1 tsp salt
Directions
- Mix water and yeast and stir to combine.
- Add flour and salt and mix until a shaggy dough forms.
- Cover and let rest for 30 minutes.
- Two sets of slap and folds, 30 minutes apart. Cover and let sit in refrigerator overnight.
- Pull from refrigerator the next day, set of folds and shape into a ball. Let rest covered at room temperature for 30 minutes.
- On a floured surface, fold dough in half and cut into four pieces. Flatten and roll into balls. Let rest for 10 minutes.
- Flatten, fold, press and pinch into a loaf shape. Place on parchment and cover with towel, let rise for 30 minutes.
- Dust with flour, score and bake covered at 450 for 20 minutes, then uncovered at 390 for 10 minutes.
