Grown Up Grilled Cheese

Ingredients

  • 7 oz Gruyere cut into chunks
  • 2 oz Brie, rind removed
  • 2 Tbs Vermouth
  • Chives
  • 1 tsp Dijon mustard
  • 3 Tbs softened butter

Directions

  1. Process cheese and vermouth in food processor until it forms a smooth paste.
  2. Coarsely chop chives and pulse a few times to combine.
  3. Make compound butter out of mustard and butter - use on the outside of the bread.
  4. Proceeed as normal.
