Grown Up Grilled Cheese

Ingredients
- 7 oz Gruyere cut into chunks
- 2 oz Brie, rind removed
- 2 Tbs Vermouth
- Chives
- 1 tsp Dijon mustard
- 3 Tbs softened butter
Directions
- Process cheese and vermouth in food processor until it forms a smooth paste.
- Coarsely chop chives and pulse a few times to combine.
- Make compound butter out of mustard and butter - use on the outside of the bread.
- Proceeed as normal.
