Ingredients
- 1 cup sugar
- 1/2 cup salt
- 1 Tbs Cracked Black Peppercorns
- 2 tsp minced fresh thyme
- 3/4 tsp pink salt
- 1 crumbled bay leaf
- Mix thoroughly
Directions
- Remove Skin from pork belly if intact.
- Place belly in 13 x 9 baking dish and cover all sides of the belly well with the cure.
- Cover and refrigerate, flipping every other day.
- After 7 to 10 days, it will be cured.
- Rinse, dry and smoke fat side up between 200 and 225 for 1 1/2 to 2 hours (150 degrees).
- Let smoker smoke for about 5 - 10 minutes as initial smoke is bitter.
- Remove and cool.
