Bacon

Ingredients

  • 1 cup sugar
  • 1/2 cup salt
  • 1 Tbs Cracked Black Peppercorns
  • 2 tsp minced fresh thyme
  • 3/4 tsp pink salt
  • 1 crumbled bay leaf
  • Mix thoroughly

Directions

  1. Remove Skin from pork belly if intact.
  2. Place belly in 13 x 9 baking dish and cover all sides of the belly well with the cure.
  3. Cover and refrigerate, flipping every other day.
  4. After 7 to 10 days, it will be cured.
  5. Rinse, dry and smoke fat side up between 200 and 225 for 1 1/2 to 2 hours (150 degrees).
  6. Let smoker smoke for about 5 - 10 minutes as initial smoke is bitter.
  7. Remove and cool.
