Easter 2025

  • Main:

    • Ham:
      • Honey Mustard Glaze
      • Broil King Keg
      • Turned out pretty well. Would try again.
    • Scalloped Potatoes:
      • Oven -> Roast Pan
      • Used the regular recipe - sort of, and mandolin on the 2nd thinnest setting I think.
      • Did potatoes and onion on it - worked out great. Did quite a few layers, same amount of liquid as recipe.
    • Whole Roasted Cauliflower:
      • Meh. It was alright.
      • Small Oven -> Roast Pan
    • Green Beans:
      • Pretty good.
      • Stove -> Skillet
    • Rolls:
      • Oven -> Muffin Tin
      • Metal muffin tin is much better

Execution

  • Ham:

Ingredients

Ham

  • 1 cup of Honey
  • 1/2 cup butter
  • 3 Tbsp Dijon Mustard
  • Coat ham, 2 hours at 325 uncovered

Glaze

  • 2 cups Pineapple Juice
  • 2 tbsp Grainy Mustard
  • 1/4 cup Brown Sugar
  • 2 Tbsp honey
  • 1 Tbsp Rub
  • add to saucepan and reduce by half

Directions

  1. Pull ham from fridge 90 minutes before cooking.
  2. Light Keg and bring to 325 degrees.
  3. Brush ham with ‘pre-glaze’.
  4. Cook on grill uncovered until it reaches 140 degrees - about 2, 2 1/2 hours.
  5. Brush with glaze in last 15 minutes.
  6. Pull from grill, let rest 25 minutes and then glaze again.
