Welsh Rarebit

Ingredients
- 4 Tbsp butter
- 7 Tbsp flour
- 1 Tbsp Dijon mustard
- 1 cup stout
- 1 cup milk
- 1 1/3 cups heavy cream
- 1 1/2 cups grated cheddar
- 1 loaf of bread
- salt, tabasco & worcestershire to taste
Directions
- In a saucepan create a blonde roux with the butter and flour.
- Stir in the mustard followed by the beer, milk and cream.
- Simmer for 5 minutes, whisk in the cheese until melted and season.
- Pour the sauce over your sliced bread and broil until oozy and scabby.
