Welsh Rarebit

Ingredients

  • 4 Tbsp butter
  • 7 Tbsp flour
  • 1 Tbsp Dijon mustard
  • 1 cup stout
  • 1 cup milk
  • 1 1/3 cups heavy cream
  • 1 1/2 cups grated cheddar
  • 1 loaf of bread
  • salt, tabasco & worcestershire to taste

Directions

  1. In a saucepan create a blonde roux with the butter and flour.
  2. Stir in the mustard followed by the beer, milk and cream.
  3. Simmer for 5 minutes, whisk in the cheese until melted and season.
  4. Pour the sauce over your sliced bread and broil until oozy and scabby.
