Steak

Ingredients

  • 1 1/2 lb Flank Steak, cut in 2 - 3 inch wide strips
  • 1 Tbs extra virgin olive oil
  • 2 tsp minced chipotles
  • 1 1/2 tsp salt
  • 3/4 tsp ground cumin

Directions

  1. Combine spice paste and spread over steak strips. Set aside.

Jalapeno Scallion Salsa

Ingredients

  • 2 jalapenos
  • 20 scallions
  • 2 Tbs extra virgin olive oil
  • 1 1/2 Tbs lime juice
  • 1 tsp adobo sauce
  • 1/2 tsp salt

Directions

  1. Preheat grill for 15 minutes, then shut off 1 burner.
  2. Grill steak and jalapenos at the same time - jalapenos at the back.
  3. Flip every two minutes, and give jalapenos a quarter turn each time.
  4. Cook steak until 125 degrees, 7 - 12 minutes.
  5. Remove steak to rest, put jalapenos in a bowl covered in saran.
  6. Grill scallions for 1 1/2 minutes, then move the green parts over the cool side while finishing the whites for another 2 minutes.
  7. Gril tortillas for 30 - 40 seconds per side, wrap in foil to stay warm.
  8. Seed and mince jalapenos, mince scallions, combine with rest of salsa ingredients.
  9. Slice steak against the grain.
  10. Serve with cilantro, lime and sour cream.
