ATK - Tacos Al Carbon
- 1 1/2 lb Flank Steak, cut in 2 - 3 inch wide strips
- 1 Tbs extra virgin olive oil
- 2 tsp minced chipotles
- 1 1/2 tsp salt
- 3/4 tsp ground cumin
- Combine spice paste and spread over steak strips. Set aside.
- 2 jalapenos
- 20 scallions
- 2 Tbs extra virgin olive oil
- 1 1/2 Tbs lime juice
- 1 tsp adobo sauce
- 1/2 tsp salt
- Preheat grill for 15 minutes, then shut off 1 burner.
- Grill steak and jalapenos at the same time - jalapenos at the back.
- Flip every two minutes, and give jalapenos a quarter turn each time.
- Cook steak until 125 degrees, 7 - 12 minutes.
- Remove steak to rest, put jalapenos in a bowl covered in saran.
- Grill scallions for 1 1/2 minutes, then move the green parts over the cool side while finishing the whites for another 2 minutes.
- Gril tortillas for 30 - 40 seconds per side, wrap in foil to stay warm.
- Seed and mince jalapenos, mince scallions, combine with rest of salsa ingredients.
- Slice steak against the grain.
- Serve with cilantro, lime and sour cream.
