Gravity Carrot Cake

Cake
Ingredients
- 2 cups grated carrots
- 4 eggs
- 2 cups white sugar
- 1 tsp vanilla
- 1 1/2 cups vegetable oil
- 1 cup crushed pineapple (drained from can if using - basically the whole can)
- 2 cups flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1/2 tsp cloves, ginger
- 1/4 tsp allspice, nutmeg
- 1 cup chopped walnuts
- 1 cup raisins
Directions
- Preheat oven to 325
- In a large bowl, combine carrot, eggs, sugar, vanilla and oil. Mix until smooth and add the pineapple.
- In another bowl, whisk together all the dry ingredients, and then fold into the wet mixture. Stir in the walnuts and raisins.
- Coat a bundt pan liberally with butter and flour.
- Pour batter in the pan and bake for 50-60 minutes.
Icing
Ingredients
- 8 oz room temperature cream cheese
- 1 cup icing sugar
- juice and zest of 1 lemon
- chopped walnuts for garnishing
Directions
- Combine cream cheese and sugar in bowl of food processor or mixer and process until no lumps remain.
- Add lemon zest and juice and mix until combined.
- When cake has cooled, ice and decorate with walnuts.
