Gravity Carrot Cake

[Cafe Gravity]

Cake

Ingredients

  • 2 cups grated carrots
  • 4 eggs
  • 2 cups white sugar
  • 1 tsp vanilla
  • 1 1/2 cups vegetable oil
  • 1 cup crushed pineapple (drained from can if using - basically the whole can)
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp cloves, ginger
  • 1/4 tsp allspice, nutmeg
  • 1 cup chopped walnuts
  • 1 cup raisins

Directions

  1. Preheat oven to 325
  2. In a large bowl, combine carrot, eggs, sugar, vanilla and oil. Mix until smooth and add the pineapple.
  3. In another bowl, whisk together all the dry ingredients, and then fold into the wet mixture. Stir in the walnuts and raisins.
  4. Coat a bundt pan liberally with butter and flour.
  5. Pour batter in the pan and bake for 50-60 minutes.

Icing

Ingredients

  • 8 oz room temperature cream cheese
  • 1 cup icing sugar
  • juice and zest of 1 lemon
  • chopped walnuts for garnishing

Directions

  1. Combine cream cheese and sugar in bowl of food processor or mixer and process until no lumps remain.
  2. Add lemon zest and juice and mix until combined.
  3. When cake has cooled, ice and decorate with walnuts.
