Tomato Sauce

[Dinner With Julie - Meatballs for Mothers]

Ingredients

  • olive oil, for cooking
  • 2-3 garlic cloves, sliced
  • 1 28 oz can whole or San Marzano-style tomatoes (whole in tomato puree)
  • 1 28 oz (540 mL) can crushed tomatoes
  • 1 small onion, peeled and halved
  • 1/4-1/2 cup butter
  • Salt and pepper to taste

Directions

  1. Heat a drizzle of oil in a large, heavy-bottomed pot set over medium-high heat, and cook the garlic for a minute or two.
  2. Pour in the tomatoes, add the onion and butter, give everything a stir and a good pinch of salt.
  3. Reduce the heat to low and simmer for 20-30 minutes.

Meatballs

Ingredients

  • 2 slices white sandwich bread
  • 1/3 cup milk
  • 1 lb ground beef, bison or elk
  • 1/2 lb ground pork
  • 1 egg
  • a small handful of flat-leaf parsley, finely chopped
  • a small handful of freshly grated Parmesan
  • salt and pepper

Directions

  1. Tear the bread into a bowl and pour the milk over it.
  2. Allow it to sit for a few minutes, then add the beef, pork, egg, parsley and Parmesan.
  3. Add some salt and pepper and mix it all up with your hands. You can do this ahead of time and keep the mixture in the fridge.
  4. Shape into 1-2 inch balls and set aside on a baking sheet.
  5. Carefully drop them into the simmering sauce. You might not fit them all into your pot - that’s ok. Leave the rest to simmer after the first has been cooked, or freeze them for another batch.
  6. Cover thte pot with a lid and leave to simmer. DO NOT STIR.
  7. Simmer for 20 minutes.

Meatballs

Ingredients

  • 11 Saltines -> Smash
  • 1/2 cup milk
  • 1 lb ground beef
  • 1 oz parmesan
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Crush saltines and let sit in milk for 5 minutes until saltines soften.
  2. Add everything else and mix, combine into 12 1/4 cup meatballs.
  3. Place in fridge - can hold for up to 48 hours.

Sauce

Ingredients

  • 5 cloves of garlic smashed
  • 1/8 cup of EVOO
  • 28 oz can crushed tomates
  • 1/2 tsp of salt

Directions

  1. Preheat oven to 400 degrees.
  2. Add garlic and EVOO to cold pot - over low heat cook for 10 minutes until garlic is golden brown.
  3. Add pepper flakes and cook for 30 seconds until fragrant.
  4. Add rest of ingredients, nestle meatballs in, bring to simmer and put in oven for 40 minutes.
  • Leave meatballs uncovered to cool while making pasta

Pasta

Ingredients

  • 4 quarts of salted water
  • 1 tbs salt
  • 1 pound of spaghetti

Directions

  • Cook pasta for 8 minutes until al dente
  • Moisten pasta with some sauce
  • 3 tbs chopped basil to sauce
