Chili Sauce

Ingredients

  • 10 lbs Ripe Tomatoes
  • 6 large stalks of celery
  • 4 large oninons
  • 1 large green pepper

Brine

  • 2 c white vinegar
  • 4 c white sugar
  • 1/8 tsp pepper
  • 2 tsp mustard seed

Directions

  1. Skin tomatoes and cut in large pieces.
  2. Chop rest of veggies finely.
  3. Combine and sprinkle with 1/2 cup of salt, let sit overnight.
  4. Drain well in the morning and add brine to the ingredients.
  5. Bring to a rolling boil for 15 minutes.
  6. Bottle.
